Lentil soups

Serves 4

s   175g of red lentils

s   1 medium onion

s   50g olive oil

s   1 medium potato

s   1 400g tin of tomatoes

s   Seeds from 6 green cardamom pods

s   850ml of water or light vegetable stock

s   1/2 tsp caraway seeds

s   Salt and pepper to taste (optional)

s   Juice of 1/2 Lemon (optional)

Wash lentils in several changes of water. Chop onion and potato fry in oil until lightly browned.  Add tomatoes, lentils water or stock, cardamom seeds and simmer until lentils cooked approximately 30-40 mins.* Add caraway seeds and simmer for 3-4 mins. Add seasoning.  Serve.


Blend for smoother soup. Season to taste. Add juice of lemon and caraway seeds before reheating!
